Description
A delicious and creamy fried rice recipe featuring chicken and vegetables.
Ingredients
Scale
- 3 cups cooked jasmine rice, cold
- 2 tablespoons vegetable oil
- 1 pound chicken breast, diced
- 2 eggs, lightly beaten
- 1 cup frozen peas and carrots
- 3 green onions, sliced
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1 tablespoon sriracha
- 1 teaspoon garlic powder
Instructions
- Start by heating a large skillet or wok over medium-high heat. Add the vegetable oil, letting it shimmer before adding the diced chicken. Cook until the chicken is golden and cooked through, about 5–6 minutes. I always it fries instead of steaming, giving Bang Bang Fried Rice its signature texture.
- Stir in the peas and carrots and cook until heated through.
- Lower the heat slightly and drizzle in the bang bang sauce. Toss everything together until every grain of rice is coated in that creamy, spicy goodness.
- Finish with sliced green onions and serve hot.
Notes
- This dish is best served immediately for maximum flavor and texture.
