Description

A delicious and creamy fried rice recipe featuring chicken and vegetables.

Ingredients

Scale
  • 3 cups cooked jasmine rice, cold
  • 2 tablespoons vegetable oil
  • 1 pound chicken breast, diced
  • 2 eggs, lightly beaten
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder

Instructions

  1. Start by heating a large skillet or wok over medium-high heat. Add the vegetable oil, letting it shimmer before adding the diced chicken. Cook until the chicken is golden and cooked through, about 5–6 minutes. I always it fries instead of steaming, giving Bang Bang Fried Rice its signature texture.
  2. Stir in the peas and carrots and cook until heated through.
  3. Lower the heat slightly and drizzle in the bang bang sauce. Toss everything together until every grain of rice is coated in that creamy, spicy goodness.
  4. Finish with sliced green onions and serve hot.
