Description

A flavorful beef chuck stew cooked with spices and served with rice or naan.


Ingredients

  • 2 pounds beef chuck
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons garam masala
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • ½ teaspoon ground mustard
  • ½ teaspoon cayenne pepper (optional)
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • 2 tablespoons tomato paste
  • ¼ cup apple cider vinegar
  • 1 cup low-sodium beef stock
  • 1 teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  • 3 tablespoons neutral oil

Instructions

  1. Cut beef chuck into 2-inch cubes; season with salt and pepper.
  2. Heat neutral oil in a cast-iron skillet over medium-high heat. Brown the seasoned beef on all sides; set aside.
  3. In the same skillet, sauté chopped onions until caramelized (5-7 minutes), then add minced garlic and cook for another minute.
  4. Stir in spices and liquids: garam masala, cumin, paprika, turmeric, ground mustard, cayenne pepper (if using), ground ginger, cinnamon, tomato paste, apple cider vinegar, and beef stock. Mix well.
  5. Return browned beef to the skillet; cover and simmer on low heat for about 60 minutes until tender.
  6. Taste and adjust seasoning if necessary before serving hot over rice or with naan.

Notes

  • This dish can also be served with crusty bread.
  • For a spicier kick, add more cayenne pepper.
