Description
A deliciously sweet and buttery snack made with Puffcorn.
Ingredients

- 1/2 cup salted butter
- 1/2 cup light brown sugar, packed
- 1/4 cup light corn syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 3 ounces butter-flavored Puffcorn
Instructions
- Preheat the oven to 250°F and line a sheet pan with parchment paper.
- In a large pot over medium-high heat, melt the salted butter. Stir in the light brown sugar and light corn syrup. Bring to a boil and simmer for 2 minutes.
- Remove the pot from the heat and stir in the vanilla extract and baking soda (it will bubble up a little).
- Add the contents of the butter-flavored Puffcorn bag and very gently mix until it is thoroughly coated.
- Transfer the Puffcorn to the prepared sheet pan.
- Bake for 30 minutes, stirring every 10 minutes.
- Let the Puffcorn cool completely, stirring the mixture occasionally to prevent it from sticking together.
Notes
- This snack can be stored in an airtight container for several days.
- For a twist, consider adding a sprinkle of sea salt before baking.
