Chocolate Chip Cottage Cheese Cookies

Description

A delicious recipe for cookies made with cottage cheese and dark chocolate chunks.


Ingredients

Scale
  • 2/3 cup 4% cottage cheese
  • 1 tablespoon pure vanilla extract
  • 1/4 cup maple syrup
  • 1/2 cup unsalted butter (melted)
  • 3/4 cup dark brown sugar
  • 1 large egg (at room temperature)
  • 1 1/4 cups all-purpose flour (spooned and leveled)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1 1/2 cups dark chocolate chunks (or chips)

Instructions

  1. Blend the cottage cheese, vanilla and maple syrup in a blender until smooth (use a small blender if possible).
  2. Whisk the melted butter and brown sugar in a large mixing bowl or bowl of a stand mixer for 1 minute.
  3. Add the egg and blended cottage cheese mixture and beat together for an additional 30 seconds.
  4. Add in the remaining ingredients aside from the chocolate. Mix until just combined.
  5. Fold in the chocolate chips/chunks.
  6. Cover the bowl and place in the fridge to chill for 30-60 minutes, or overnight.
  7. Preheat the oven to 325°F.
  8. Scoop (or roll) the dough into 10 large cookies (we use a 3 ounce scoop). Top each cookie with additional chocolate if desired.
  9. Bake for 16-18 minutes or until the edges are golden brown.
  10. Let cool on the baking sheet for 15 minutes, then transfer to a wire rack to finish cooling.

  • Chill the dough for the best texture and flavor.
  • Use a small blender for easier mixing of the cottage cheese mixture.
