Description
A delicious recipe for cookies made with cottage cheese and dark chocolate chunks.
Ingredients

- 2/3 cup 4% cottage cheese
- 1 tablespoon pure vanilla extract
- 1/4 cup maple syrup
- 1/2 cup unsalted butter (melted)
- 3/4 cup dark brown sugar
- 1 large egg (at room temperature)
- 1 1/4 cups all-purpose flour (spooned and leveled)
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1 1/2 cups dark chocolate chunks (or chips)
Instructions
- Blend the cottage cheese, vanilla and maple syrup in a blender until smooth (use a small blender if possible).
- Whisk the melted butter and brown sugar in a large mixing bowl or bowl of a stand mixer for 1 minute.
- Add the egg and blended cottage cheese mixture and beat together for an additional 30 seconds.
- Add in the remaining ingredients aside from the chocolate. Mix until just combined.
- Fold in the chocolate chips/chunks.
- Cover the bowl and place in the fridge to chill for 30-60 minutes, or overnight.
- Preheat the oven to 325°F.
- Scoop (or roll) the dough into 10 large cookies (we use a 3 ounce scoop). Top each cookie with additional chocolate if desired.
- Bake for 16-18 minutes or until the edges are golden brown.
- Let cool on the baking sheet for 15 minutes, then transfer to a wire rack to finish cooling.
Notes
- Chill the dough for the best texture and flavor.
- Use a small blender for easier mixing of the cottage cheese mixture.
