- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 (15-ounce) can diced tomatoes with green chilies
- 1 (15-ounce) can crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Juice of 1 lime
- Corn tortillas or tortilla chips (for serving)
Instructions
- In a small skillet, heat the olive oil over medium heat. Sauté the onion, garlic, and jalapeño until softened and fragrant—about 4 minutes. This extra step deepens the flavor and brings out the natural sweetness of the vegetables.
- Transfer the sautéed mixture to the slow cooker. Then add in the bell peppers, corn, black beans, pinto beans, both types of tomatoes, and the vegetable broth. Sprinkle in the chili powder, cumin, smoked paprika, salt, and black pepper.
- Stir everything together gently, then cover and cook on low for 6–7 hours, or high for 3–4 hours. The soup will gradually thicken and develop a rich, spicy depth.
