Description

Ingredients

  • 4 cloves garlic, finely minced
  • 4 pieces chicken thighs, boneless and skinless
  • 5 cups fresh spinach, roughly chopped
  • 2 tablespoons olive oil
  • 1/2 lemon zest and juice
  • to taste salt
  • to taste freshly cracked black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Cut chicken thighs into bite-sized strips.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add chicken and cook until lightly golden.
  5. Add minced garlic and sauté briefly.
  6. Add chopped spinach and stir until wilted.
  7. Sprinkle red pepper flakes if using.
  8. Add lemon zest and juice.
  9. Cook another minute until chicken is fully cooked.
  10. Serve warm.
