Description

Delicious mini tarts filled with caramelized onions and creamy goat cheese, garnished with fresh thyme.


Ingredients

  • 1 tbsp olive oil
  • 2 yellow or sweet onions, thinly sliced
  • 1/2 cup goat cheese, creamy and softened
  • 1 tbsp fresh thyme, for garnish
  • 1 package mini tart shells, ready-made or homemade

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Add the sliced onions and cook slowly for 30-40 minutes, stirring occasionally until they are golden brown and fragrant.
  3. While the onions caramelize, follow the package instructions to prepare the mini tart shells.
  4. Once the onions are caramelized, remove from heat and allow to cool slightly.
  5. Spoon goat cheese into each tart shell, allowing it to spread evenly.
  6. Top with caramelized onions, creating mounds over the cheese.
  7. Bake for 15-20 minutes until tart shells are golden brown and crispy.
  8. Garnish with fresh thyme before serving.
