Delicious mini tarts filled with caramelized onions and creamy goat cheese, garnished with fresh thyme.
Ingredients

- 1 tbsp olive oil
- 2 yellow or sweet onions, thinly sliced
- 1/2 cup goat cheese, creamy and softened
- 1 tbsp fresh thyme, for garnish
- 1 package mini tart shells, ready-made or homemade
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat. Add the sliced onions and cook slowly for 30-40 minutes, stirring occasionally until they are golden brown and fragrant.
- While the onions caramelize, follow the package instructions to prepare the mini tart shells.
- Once the onions are caramelized, remove from heat and allow to cool slightly.
- Spoon goat cheese into each tart shell, allowing it to spread evenly.
- Top with caramelized onions, creating mounds over the cheese.
- Bake for 15-20 minutes until tart shells are golden brown and crispy.
- Garnish with fresh thyme before serving.
