Ingredients

  • 34 cups Powdered Sugar (Sugar can be adjusted based on sweetness preference.)
  • 1 teaspoon Vanilla Extract (Optional and can be omitted if desired.)
  • 23 tablespoons Milk or Cream (Non-dairy milk can replace cow’s milk.)

Instructions

  1. In a small saucepan, combine fresh blackberries and lemon juice. Cook on medium heat for about 20 minutes, stirring until the mixture thickens and reduces to 1/3 cup. Let it cool.
  2. Optionally strain the blackberry puree through a fine mesh sieve to separate seeds for a smoother frosting.
  3. In a large bowl, add softened unsalted butter and cooled blackberry puree; beat together until smooth.
  4. Gradually mix in powdered sugar, one cup at a time, until fluffy and light, about 2-3 minutes.
  5. Add vanilla extract, then mix in milk or cream one tablespoon at a time until the desired consistency is reached.
  6. Give the frosting a final whip for 1-2 minutes until airy and creamy, ready to spread on desserts.
