Description
This luscious blackberry frosting is perfect for spreading on your favorite cakes and cupcakes.
Ingredients

- 1 cup Fresh Blackberries (Can use frozen blackberries, thawed and drained.)
- 2 tablespoons Lemon Juice (Fresh lemon juice is recommended for optimal flavor.)
- 1/2 cup Unsalted Butter (Can use dairy-free butter for a vegan option.)
- 3–4 cups Powdered Sugar (Sugar can be adjusted based on sweetness preference.)
- 1 teaspoon Vanilla Extract (Optional and can be omitted if desired.)
- 2–3 tablespoons Milk or Cream (Non-dairy milk can replace cow’s milk.)
Instructions
- In a small saucepan, combine fresh blackberries and lemon juice. Cook on medium heat for about 20 minutes, stirring until the mixture thickens and reduces to 1/3 cup. Let it cool.
- Optionally strain the blackberry puree through a fine mesh sieve to separate seeds for a smoother frosting.
- In a large bowl, add softened unsalted butter and cooled blackberry puree; beat together until smooth.
- Gradually mix in powdered sugar, one cup at a time, until fluffy and light, about 2-3 minutes.
- Add vanilla extract, then mix in milk or cream one tablespoon at a time until the desired consistency is reached.
- Give the frosting a final whip for 1-2 minutes until airy and creamy, ready to spread on desserts.
Notes
- This frosting can be adjusted for sweetness by modifying the amount of powdered sugar.
- For a vegan version, substitute unsalted butter with dairy-free butter and use non-dairy milk.
