Description

A delicious slow-cooked beef roast that is tender and flavorful, perfect for serving over pasta or mashed potatoes.


Ingredients

Scale
  • 23 lbs beef roast (chuck or brisket)
  • 1 can (14 oz / 400 g) diced tomatoes
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1/2 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt & black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked pasta or mashed potatoes (for serving)

Instructions

  1. Prep beef: Season beef roast with salt and pepper.
  2. Add to crockpot: Place beef in the slow cooker. Add diced tomatoes, onion, garlic, beef broth, tomato paste, oregano, basil, thyme, and red pepper flakes.
  3. Cook: Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is tender and easily shredded.
  4. Shred: Remove beef and shred with two forks. Return to sauce and stir.
  5. Serve: Garnish with parsley and serve over pasta, rice, or mashed potatoes.

Notes

  • This recipe can also be made with other cuts of beef if preferred.
  • For extra flavor, consider adding additional herbs or spices as desired.
