Description
A delicious slow-cooked beef roast that is tender and flavorful, perfect for serving over pasta or mashed potatoes.
Ingredients

- 2–3 lbs beef roast (chuck or brisket)
- 1 can (14 oz / 400 g) diced tomatoes
- 1 small onion, diced
- 3 garlic cloves, minced
- 1/2 cup beef broth
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- 1/2 tsp crushed red pepper flakes (optional)
- Salt & black pepper to taste
- Fresh parsley, chopped (for garnish)
- Cooked pasta or mashed potatoes (for serving)
Instructions
- Prep beef: Season beef roast with salt and pepper.
- Add to crockpot: Place beef in the slow cooker. Add diced tomatoes, onion, garlic, beef broth, tomato paste, oregano, basil, thyme, and red pepper flakes.
- Cook: Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is tender and easily shredded.
- Shred: Remove beef and shred with two forks. Return to sauce and stir.
- Serve: Garnish with parsley and serve over pasta, rice, or mashed potatoes.
Notes
- This recipe can also be made with other cuts of beef if preferred.
- For extra flavor, consider adding additional herbs or spices as desired.
