Description
A delicious and filling soup made with Italian sausage, vegetables, and creamy goodness.
Ingredients

- 1 cup white onion (diced)
- 1 1/2 cups carrots (diced)
- 1 pound Italian sausage
- 4 cloves garlic (minced)
- 2 tablespoons flour
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 5 cups chicken broth (or stock)
- 2 cups Russet potatoes
- 2 (15 ounce) cans cannellini beans (drained)
- 3 cups fresh spinach
- 1 cup heavy cream
Instructions
- Heat olive oil in a large pot on medium high heat and add the onion and carrots; sauté for 3-4 minutes.
- Add in the Italian sausage and cook until browned, breaking it apart as it cooks.
- Add in the minced garlic and cook just until fragrant.
- Sprinkle in the flour and cook for 1-2 minutes.
- Add in the chicken broth and potatoes, and let it come to a low boil. Cook for 10-15 minutes or until the potatoes are tender.
- Add in the beans and spinach and simmer for 2-3 minutes.
- Reduce the heat to medium low and add in the heavy cream.
- Add more salt and pepper to taste and serve!

- This soup can be served with crusty bread for a complete meal.
