Description

A delicious and filling soup made with Italian sausage, vegetables, and creamy goodness.


Ingredients

Scale
  • 1 cup white onion (diced)
  • 1 1/2 cups carrots (diced)
  • 1 pound Italian sausage
  • 4 cloves garlic (minced)
  • 2 tablespoons flour
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 5 cups chicken broth (or stock)
  • 2 cups Russet potatoes
  • 2 (15 ounce) cans cannellini beans (drained)
  • 3 cups fresh spinach
  • 1 cup heavy cream

Instructions

  1. Heat olive oil in a large pot on medium high heat and add the onion and carrots; sauté for 3-4 minutes.
  2. Add in the Italian sausage and cook until browned, breaking it apart as it cooks.
  3. Add in the minced garlic and cook just until fragrant.
  4. Sprinkle in the flour and cook for 1-2 minutes.
  5. Add in the chicken broth and potatoes, and let it come to a low boil. Cook for 10-15 minutes or until the potatoes are tender.
  6. Add in the beans and spinach and simmer for 2-3 minutes.
  7. Reduce the heat to medium low and add in the heavy cream.
  8. Add more salt and pepper to taste and serve!
