Description

Deliciously light and airy peppermint meringues perfect for any occasion.


Ingredients

  • 4 large Egg Whites (Room temperature)
  • 1 cup Granulated Sugar (Can use caster sugar)
  • 1 teaspoon Cream of Tartar (Do not substitute)
  • 1 pinch Salt
  • 1 teaspoon Vanilla Extract (Can use almond extract)
  • 1 teaspoon Peppermint Extract (Primary flavoring)
  • 1 cup Crushed Peppermint Candies (Can substitute with chocolate shavings or sprinkles)

Instructions

  1. Preheat the oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. Beat egg whites in a clean mixing bowl on medium speed until foamy and bubbly (about 2-3 minutes).
  3. Add cream of tartar and a pinch of salt. Increase speed to high and beat until soft peaks form (2-3 minutes).
  4. Gradually add granulated sugar, one tablespoon at a time, while mixing on high speed. Mix until stiff, glossy peaks form (5-7 minutes).
  5. Gently fold in vanilla and peppermint extracts without deflating the meringue.
  6. Transfer meringue to a piping bag and pipe small mounds onto baking sheet, spaced about an inch apart.
  7. Bake in preheated oven for about 90 minutes or until dry to the touch.
  8. Turn off the oven and leave meringues inside to cool for 1-2 hours.
  9. Once cooled, sprinkle tops with crushed peppermint candies to garnish.

  • Ensure the mixing bowl and beaters are clean of any grease for best results.
  • For a festive touch, you can use colored sugar instead of crushed peppermint candies.
