- 2 lbs beef stew meat cubed
- 1 onion diced
- 2 carrots chopped
- 2 celery stalks chopped
- 4 garlic cloves minced
- 1 can (14 oz) diced tomatoes
- 1 can chickpeas drained
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp smoked paprika
- 1 tsp turmeric
- 1 tsp ground coriander
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat oil in a Dutch oven over medium high heat and brown the beef on all sides in batches.
- Remove the beef and sauté onion, carrot, and celery until softened, then add garlic and cook for 30 seconds.
- Stir in tomato paste and spices, cooking for one minute to deepen flavor.
- Return beef to the pot and add beef broth and diced tomatoes, scraping up browned bits.
- Bring to a simmer, cover, and cook for 1 to 2 hours until beef is tender.
- Add chickpeas and simmer for an additional 10 minutes, then garnish with parsley and serve.
