Description

A hearty and flavorful beef stew that is perfect for a comforting meal.


Ingredients

  • 2 lbs beef stew meat cubed
  • 1 onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 4 garlic cloves minced
  • 1 can (14 oz) diced tomatoes
  • 1 can chickpeas drained
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp smoked paprika
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a Dutch oven over medium high heat and brown the beef on all sides in batches.
  2. Remove the beef and sauté onion, carrot, and celery until softened, then add garlic and cook for 30 seconds.
  3. Stir in tomato paste and spices, cooking for one minute to deepen flavor.
  4. Return beef to the pot and add beef broth and diced tomatoes, scraping up browned bits.
  5. Bring to a simmer, cover, and cook for 1 to 2 hours until beef is tender.
  6. Add chickpeas and simmer for an additional 10 minutes, then garnish with parsley and serve.
