Description

Deliciously tangy lemon brownies made with white chocolate and a lemon glaze. Perfect for dessert!


Ingredients

  • ½ cup unsalted butter
  • 6 ounces white chocolate (chopped, divided)
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 ½ tablespoons lemon zest (about 23 medium lemons)
  • ¼ teaspoon table salt
  • 3 large eggs (at room temperature)
  • 2 tablespoons lemon juice (about ½ medium lemon)
  • 1 ½ cups all-purpose flour
  • 1 ½ cups powdered sugar
  • 2 tablespoons lemon juice
  • Lemon zest (optional)

Instructions

  1. Preheat the oven to 350°F (180°C), or 160°C for a fan oven. Line a 9×9-inch (approx 22×22 cm) baking pan with parchment paper and set aside.
  2. In a large, microwave-safe bowl, melt the butter and 2 ounces (55 g) of the white chocolate in 30-second intervals, stirring after each, until melted and smooth.
  3. Whisk in the granulated sugar, brown sugar, lemon zest, and salt until smooth.
  4. Add the eggs and lemon juice, then whisk until fully combined.
  5. Stir in the flour until no dry streaks remain.
  6. Fold in the remaining chopped white chocolate until evenly distributed.
  7. Transfer the batter to the prepared pan and smooth the top into an even layer.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the brownies to cool completely in the pan before adding the glaze.
  10. In a medium bowl, whisk together the powdered sugar and lemon juice until smooth. The mixture should be thick but pourable.
  11. Spread the glaze evenly over the surface of the cooled lemon brownies.
  12. Optionally, sprinkle additional lemon zest over the glaze.
  13. Slice into 16 squares and serve.

Notes

  • These brownies are best served after they have cooled completely to allow the glaze to set properly.
  • Store any leftovers in an airtight container at room temperature.
