A quick and delicious one-pan meal featuring chicken, rice, and savory seasonings.
Ingredients

- 1 Tablespoon Olive Oil
- 1 pound Chicken Breasts (cut into 1 inch pieces)
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 2 Tablespoons Butter
- 1 Box Rice a Roni Chicken (6 ounces)
- 2 ½ cups Water
- 1 Tablespoon Fresh Chopped Parsley (optional, for topping)
Instructions
- Heat the olive oil in a large skillet over medium high heat.
- Add in the chicken. Season the chicken with salt and pepper.
- Let it sit without tossing it and let it brown for 3-4 minutes.
- Gently turn the chicken and cook the other size for 3-4 more minutes.
- Add in the butter. Let it melt. Scrape any brown bits off the bottom of the pan.
- Stir in the rice and saute for about 3 minutes until the rice is golden brown (tossing occasionally).
- Mix in the seasoning packet from the box of Rice and Roni and the water.
- Bring the mixture to a boil. Cover, reduce the heat to low and simmer for 15-20 minutes until most of the water is absorbed.
- Remove the lid, let sit for a few minutes and then it’s ready to serve topped with the fresh parsley (if using) and enjoy!
Notes
- This dish can easily be customized with vegetables or different seasonings.
- Leftovers can be stored in an airtight container in the refrigerator.
