- 400 grams Penne Pasta
- 1 can Canned Tuna
- ½ cup Kalamata Olives
- 1 jar Ardmona Basic Tomato Sauce
- 2 tablespoons Olive Oil
- 1 medium Onion
- 2 cloves Garlic
- 1 teaspoon Sugar
- 2 cups Rocket (Arugula)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and add the penne pasta. Cook according to package directions until al dente, then drain and set aside.
- Sauté Aromatics: In a large frying pan, heat 2 tablespoons of olive oil over medium-low heat. Add diced onions and minced garlic, cooking until soft and fragrant (about 8-10 minutes).
- Add Tomato Base: Increase the heat to medium-high, stir in 1 tablespoon of tomato paste, and cook for 1 minute until it becomes fragrant and deepens in color.
- Simmer Tomatoes: Add in 1 can of diced tomatoes and 1 teaspoon of sugar. Use a wooden spoon to break down the tomatoes, then serve warm.
Notes
- Substitute canned tuna with canned salmon for a different twist.
- Feel free to use store-bought or homemade tomato sauce.
- Add sliced Kalamata olives for extra texture.
- Use rocket (arugula) to add a peppery freshness to the dish.
