Description

Delicious vegan cookies made with chocolate chips and candy buttons.


Ingredients

Scale
  • 1/2 cup vegan butter (softened)
  • 1/4 cup + 3 tablespoons white sugar
  • 3/4 cup brown sugar
  • 1/4 cup milk of choice (I used soy milk)
  • 1 teaspoon vanilla extract
  • 1 3/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup vegan candy buttons (* See notes)
  • 1/2 cup vegan chocolate chips

Instructions

  1. In a large mixing bowl, add the vegan butter, white sugar, and brown sugar, and using a hand mixer, cream together.
  2. Add the milk and vanilla extract and mix well.
  3. Gently stir through the dry ingredients until just combined and no flour pockets remain.
  4. Fold through the candy buttons and chocolate chips.
  5. Cover the bowl and refrigerate the dough for an hour.
  6. Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper.
  7. Remove the cookie dough from the refrigerator and divide the dough into 12 portions.
  8. Using your hands, roll them into balls and place them on the lined sheet. Press down lightly on each one.
  9. Bake the cookies for 10-12 minutes, until the edges just begin to firm up.
  10. Remove the cookies from the oven and let them cool completely.

Notes

  • Vegan candy buttons can be substituted with any preferred vegan chocolate or candy.
